I've been looking at a way to slow cook a roast lamb on a Weber BBQ so the meat comes out tender, this is what works for me;
Ingredients
- Leg of lamb
- 3 garlic cloves finally chopped
- 1 table spook of extra-virgin olive oil
- 3 teaspoons of finely chopped rosemary
- Ground Salt and Pepper
Directions
- Add a convection tray and a trivet
- Heat Weber BBQ to 100 - 130 degrees centigrade
- Prep
- Remove all fat from the lamb
- Combine garlic, olive oil, rosemary, salt and peper into a bowl and stir
- Spread the olive oil mixture over the lamb
- Place on BBQ and roast over indirect low heat (low) with lid closed, keep an eye on temperature, it needs to stay around 100-130 degrees
- Cook for about 8 to 9 hours or until internal temperature reaches 93 degrees
- If possible, turn over at about half way to allow the juices to flow.
- If short of time, for about 5 hours, wrap tightly with tinfoil and cook for another about another 2 hours or when the internal temperature reaches 93 degrees
- (Optional) Glaze and roast for a further 30 minutes
- Once cooked, remove from the BBQ and cover with aluminum foil and rest for about 15 to 30 minutes
- Pull the lamb into bite sized pieces and serve.
Notes
- I had issues trying to keep the BBQ at a low temperature, I ended up prying the hood open a little bit to keep the temperature at a consistent 110 degrees.
